Spiced Cauliflower and Chickpeas
Ingredients
1 medium cauliflower, cut into florets
1 can (15 oz) chickpeas, drained and rinsed
2 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp turmeric
1/4 tsp cayenne pepper (optional)
Salt and black pepper to taste
1/2 cup dried cranberries
1/4 cup toasted almonds or pine nuts (optional)
2 tbsp fresh parsley or thyme, chopped (for garnish)
