  • 4 cod fillets 6 oz each, patted dry
  • 2 tbsp olive oil
  • Kosher salt and freshly ground black pepper
  • 4 tbsp unsalted butter
  • Juice of 1 lemon
  • 2 tbsp finely chopped fresh herbs parsley, dill, tarragon
