Cod in a Tomato Lemon Butter Sauce
Ingredients:
4 cod fillets (about 4-6 oz each)
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 pint cherry tomatoes (or 2 cups diced tomatoes)
1/2 cup white wine (or chicken broth)
1/2 cup fresh lemon juice (about 2 lemons)
1 teaspoon lemon zest
1 tablespoon capers (optional)
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
