Instructions:
1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
2. Sear the Cod: Heat the olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is golden and cooked through. Remove the fillets from the skillet and set aside on a plate.
3. Make the Tomato Lemon Butter Sauce: In the same skillet, reduce the heat to medium. Add the butter and let it melt. Stir in the minced garlic and cook for about 1 minute until fragrant. Add the cherry tomatoes and cook until they begin to soften and release their juices, about 3-4 minutes. Pour in the white wine (or chicken broth) and lemon juice. Stir in the lemon zest and capers (if using). Allow the sauce to simmer for 2-3 minutes, letting it reduce slightly.
4. Return the Cod: Place the seared cod fillets back into the skillet with the sauce. Spoon the sauce over the fish and let it simmer for 1-2 minutes to heat through.
