Directions:
Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 liners.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in the melted white chocolate and diced strawberries.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
In a mixing bowl, beat the butter and cream cheese until smooth and creamy. Gradually add the powdered sugar, mixing well. Stir in the vanilla extract and strawberry puree until fully incorporated.
Pipe or spread the frosting onto the cooled cupcakes. Drizzle with melted white chocolate if desired.
