Vegetable and Cheese Casserole

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a large baking dish.
  2. Sauté the vegetables: Heat some olive oil in a pan and sauté the chopped onion, bell pepper, and any other vegetables you like (such as zucchini or mushrooms) until soft. If using spinach, add it at the end.
  3. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, paprika, and garlic powder.
  4. Assemble the casserole: Add the sautéed vegetables and any additional fillings (potatoes or pasta) into the egg mixture. Mix well. Stir in 1 ½ cups of the shredded cheese.
  5. Pour into the baking dish and spread it evenly. Top with the remaining ½ cup of cheese.
  6. Bake: Place the dish in the oven and bake for 30-40 minutes, or until the top is golden brown and the casserole is set in the middle.
  7. Cool and serve: Let it cool for a few minutes before slicing and serving.
