Ingredients:
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 large sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 can (13.5 oz) coconut milk
- 2 cups kale, chopped
- Salt and pepper to taste
- Optional toppings: chopped cilantro, sliced green onions, lime wedges
