
Cowboy Meatloaf and Potato Casserole
Preparation
Before starting, preheat your oven to 375°F (190°C) and grease a baking dish that measures 9 by 13 inches.
Prepare the meatloaf: In a big bowl, mix together ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Stir thoroughly until everything is mixed evenly.
Place half of the sliced potatoes at the bottom of the greased baking dish. Form the meatloaf mixture into a loaf shape and place it on top of the potatoes. Place the rest of the cut potatoes on top of the meatloaf, making sure to cover it entirely.
Put aluminum foil on top of the dish and bake it for 45 minutes. Take off the foil, put the grated cheddar cheese on top, and bake for another 15-20 minutes until the potatoes are soft and the cheese is melted and bubbly.
Serve and enjoy: Allow the casserole to cool a bit before cutting and serving. Add some chopped fresh parsley on top, if you like.
