Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture evenly into the bottom of the prepared pan.
- Bake for 8–10 minutes until lightly golden. Let it cool.
2. Make the Cheesecake Layer:
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs, one at a time, mixing after each addition.
- Mix in the vanilla extract and sour cream until just combined.
- Pour the cheesecake mixture over the cooled crust and spread evenly.
3. Prepare the Strawberry Topping:
- In a small saucepan, combine the strawberries and sugar over medium heat.
- Cook, stirring occasionally, until the strawberries break down and release their juices (about 5–7 minutes).
- If using cornstarch, stir it in to thicken the sauce. Let the topping cool slightly.
4. Assemble and Bake:
- Drop spoonfuls of the strawberry mixture over the cheesecake layer.
- Use a knife or skewer to swirl the strawberry topping into the cheesecake.
- Bake for 30–35 minutes, or until the edges are set and the center is slightly jiggly.
5. Cool and Chill:
- Allow the bars to cool to room temperature, then refrigerate for at least 4 hours (preferably overnight) to set.
- Once chilled, use the parchment paper to lift the bars out of the pan and cut into squares.
