Instructions:
Prep the Ribs: Pat ribs dry and coat with olive oil.
Season: Mix all dry spices in a bowl. Rub the mixture generously over the ribs.
Smoke Setup: Preheat smoker to 225°F. Use hickory or applewood for flavor.
Smoke: Place ribs directly on the smoker rack. Smoke for 2.5–3 hours until tender.
Sauce and Wrap: Brush ribs with BBQ sauce, wrap in foil, and return to smoker for 30 minutes.
Finish: Unwrap, add more sauce if desired, and smoke uncovered for another 15 minutes for a sticky glaze.
Rest and Serve: Let ribs rest 10 minutes before slicing.
