Slow Cooker Southern Style Goulash
Directions
1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
2. Add the diced onion, green bell pepper, and minced garlic to the skillet. Cook for an additional 3-4 minutes until the vegetables are tender.
3. Transfer the beef and vegetable mixture to your slow cooker.
4. Add the beef broth, tomato sauce, diced tomatoes, paprika, oregano, basil, salt, and pepper to the slow cooker. Stir to combine.
5. Cook on low for 6-7 hours or on high for 3-4 hours.
6. About 30 minutes before serving, add the uncooked elbow macaroni to the slow cooker and stir well.
7. Cook until the pasta is tender and has absorbed some of the sauce, about 30 minutes.
8. If using, sprinkle shredded cheddar cheese over the top before serving.
Variations & Tips
If you have picky eaters, you can sneak in some extra veggies like finely chopped carrots or zucchini without altering the flavor too much. For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce. You can swap ground beef for ground turkey for a lighter version of this dish. Finally, for a gluten-free option, use gluten-free pasta and ensure the beef broth is also gluten-free.
