Slow Cooker Lumberjack Casserole
Directions
1. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is no longer pink and the onion is tender. Drain any excess fat.
2. In a large bowl, combine the hash brown potatoes, shredded cheddar cheese, condensed cream of mushroom soup, milk, sour cream, garlic powder, onion powder, salt, and pepper.
3. Add the cooked ground beef and onion mixture to the bowl and stir until everything is well combined.
4. Pour the mixture into a greased slow cooker and spread it out evenly.
5. Cover and cook on low for 4-6 hours, until the potatoes are tender and the casserole is heated through.
6. Stir once or twice during cooking to ensure even cooking.
7. Serve hot with your favorite sides and enjoy!
Variations & Tips
For a little spice, you can add a can of diced green chilies or a dash of hot sauce to the mixture. If you prefer, substitute ground turkey or sausage for the beef. You can also mix in some chopped bell peppers or mushrooms for added flavor and nutrition. For a crispier topping, sprinkle some crushed cornflakes or French-fried onions on top during the last hour of cooking.
