Slow Cooker Hawaiian Pork Chops
Directions
Season the pork chops with salt and pepper on both sides.
Place the pork chops in the slow cooker.
In a bowl, mix together the pineapple juice from the can, soy sauce, brown sugar, apple cider vinegar, minced garlic, chopped onion, and ground ginger. Stir until everything is well combined.
Pour the mixture over the pork chops in the slow cooker. Place the pineapple slices on top of the pork chops.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork chops are tender and fully cooked.
If you prefer a thicker sauce, remove the pork chops once they are cooked. Mix 2 tablespoons of corn starch with 2 tablespoons of cold water, then stir it into the sauce in the slow cooker. Let it cook for an additional 15-20 minutes on high, or until the sauce has thickened.
Serve the pork chops with the sauce and pineapple slices on top.
Variations & Tips
You can add a bit of spice by incorporating some red pepper flakes or a dash of sriracha sauce into the marinade. For extra tropical flair, coconut milk can be substituted for half of the soy sauce. If you prefer using bone-in pork chops, simply adjust the cooking time slightly to ensure they are tender. Don’t hesitate to experiment with this recipe—try adding sliced bell peppers or even some diced mango for different flavor profiles.
