Instructions:

1. Prepare the Shrimp: Pat the shrimp dry with paper towels. This helps them crisp up better when frying.

2. Season the Flour: In a shallow dish, whisk together the flour, salt, pepper, garlic powder, and onion powder.

3. Coat the Shrimp: Dredge each shrimp in the seasoned flour, ensuring they are fully coated. Shake off any excess flour.

4. Fry the Shrimp: Heat the vegetable oil in a large skillet or wok over medium-high heat. Carefully add the shrimp to the hot oil, working in batches to avoid overcrowding the pan. Fry for 2-3 minutes per side, until golden brown and cooked through. Remove the shrimp from the oil and set aside on a wire rack to drain excess oil.

5. Make the Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil and dried herbs (if using )

6. Combine Shrimp and Sauce: Add the fried shrimp to the sauce and toss gently to coat evenly.
