Roasted Parmesan Creamed Onions

Directions

1. Preheat your oven to 375°F (190°C).
2. Arrange the peeled and halved onions in a single layer in a large baking dish.
3. Drizzle the onions with olive oil, then sprinkle with salt and black pepper. Toss to coat evenly.
4. Roast the onions in the preheated oven for 25-30 minutes, or until they become tender and start to caramelize.
5. While the onions are roasting, combine the heavy cream, grated Parmesan cheese, minced garlic, thyme, and nutmeg in a mixing bowl.
6. Once the onions are done roasting, pour the creamy Parmesan mixture over them.
7. Return the dish to the oven and bake for an additional 15-20 minutes, or until the sauce is bubbly and the top of the onions are golden brown.
8. Let the dish cool for a few minutes before serving. Enjoy!
Variations & Tips
For a lighter version, you can substitute half-and-half for the heavy cream. If you’re catering to picky eaters, consider using milder cheeses like mozzarella or Gouda. You can also mix in some chopped spinach or kale for added greens. For a bit of heat, sprinkle in some red pepper flakes. Feel free to experiment with different herbs like rosemary or sage based on your family’s preferences.
