Instructions:
Start by organizing the ingredients. In a bowl, add the cooked rice, mashed potatoes, egg, grated cheese, salt, pepper, parsley (to taste), and baking powder.
Mix well until you form a dough. Take small portions of the dough, flatten them, and add a piece of mozzarella cheese as the filling.
Shape the dough into balls or your preferred shape. Heat oil in a frying pan and fry the balls until golden brown.
Finally, place them on paper towels to drain excess oil and serve with mayonnaise or other dipping sauces.
