Potsticker Soup with Mushrooms & Bok Choy
Instructions:
Prepare the Broth:
In a large pot, heat the chicken or vegetable broth over medium heat.
Add the garlic, grated ginger, and soy sauce to the pot. Let it simmer for 5 minutes to infuse the flavors.
Cook the Mushrooms:
Add the sliced mushrooms to the simmering broth. Cook for 3–5 minutes, or until they start to soften.
Add Potstickers:
Gently place the frozen potstickers into the broth. Allow them to cook according to the package instructions, usually about 5–7 minutes, or until they float and are fully heated through.
Add Bok Choy:
Stir in the chopped bok choy and cook for an additional 2–3 minutes, or until the bok choy is tender but still bright green.
Adjust the Seasoning:
Taste the soup and add more soy sauce if needed for flavor. You can also add a pinch of salt or a dash of sesame oil for extra depth.
Serve:
Ladle the soup into bowls and garnish with the sliced green onions. Add a sprinkle of chili flakes or a drizzle of chili oil for a spicy kick, if desired.
This quick and flavorful soup is perfect for a cozy meal, combining hearty potstickers with the freshness of bok choy and mushrooms. Enjoy! 😊
