- 8 (1 1/2 ounce each) slices thick cut bacon, chopped (about 2 cups)
- 1 small sweet onion, finely chopped (3/4 cup)
- 3 cups loosely packed roughly chopped fresh arugula
- 1 tablespoons chopped fresh thyme
- 8 ounces fontina cheese, shredded, divided (2 cups)
- 4 large eggs
- 1/4 cup heavy whipping cream
- Fresh thyme leaves
- Fresh ground black pepper
