Ingredients

  • 1 1/2 pounds baby yukon gold potatoes, scrubbed
  • 2 tablespoons, plus 1 1/4 tsp. kosher salt, divided
  • 8 (1 1/2 ounce each) slices thick cut bacon, chopped (about 2 cups)
  • 1 small sweet onion, finely chopped (3/4 cup)
  • 3 cups loosely packed roughly chopped fresh arugula
  • 1 tablespoons chopped fresh thyme
  • 8 ounces fontina cheese, shredded, divided (2 cups)
  • 4 large eggs
  • 1/4 cup heavy whipping cream
  • Fresh thyme leaves
  • Fresh ground black pepper
