Philly Cheese Steak Quesadilla

Instructions:

  1. Cook the Vegetables:
    • In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute. Season with salt and pepper. Remove the vegetable mixture from the skillet and set aside.
  2. Cook the Beef:
    • In the same skillet, add a bit more olive oil if necessary. Add the thinly sliced beef, cooking for about 3-5 minutes until browned and cooked through. Season with salt and pepper to taste.
  3. Combine:
    • Return the cooked vegetables to the skillet with the beef, mixing everything together. Cook for another minute to heat through.
  4. Assemble the Quesadillas:
    • Lay a tortilla in the skillet over medium heat. On one half of the tortilla, layer some of the beef and vegetable mixture, then sprinkle with shredded cheese. Fold the other half of the tortilla over the filling.
  5. Cook the Quesadilla:
    • Cook for about 3-4 minutes on one side, until golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side. Repeat with remaining tortillas and filling.
  6. Serve:
    • Slice the quesadillas into wedges and serve with sour cream, ranch dressing, or your favorite dipping sauce.

Tips:

  • Feel free to add mushrooms or other vegetables for extra flavor.
  • For a spicy kick, add hot sauce or sliced jalapeños to the filling.
