Step 01
Peel and slice the potato. Cook in a small pan of water until very tender. Drain off the water.
Step 02
Mash the potato with butter, vanilla, and salt until free of lumps.
Step 03
Add powdered sugar gradually, mixing on low speed until the mixture becomes thick and slightly sticky.
Step 04
Roll out the candy mixture on a powdered sugar-coated surface to a 1/4 inch thickness.
Step 05
Spread a thin layer of peanut butter over the candy, leaving a small border.
Step 06
Roll the candy up, chill in the freezer, then slice into pieces.
Notes
- Make sure to keep the surface well-coated in powdered sugar to prevent sticking.
- The candy will harden slightly as it cools but remains chewy inside.
- Adjust the amount of peanut butter filling based on your preference.
