Instructions

Prepare the zucchini:
Cut the zucchini into thin slices and sprinkle with salt.
Let it sit for 10 minutes to remove excess moisture.
Pat dry thoroughly with a paper towel to prevent it from getting soggy.
Mix the ingredients:
In a bowl, combine the zucchini slices, rolled oats, grated cheese and eggs.
Season with black pepper and stir well.
If using, toss with chopped scallions.
To Bake:
Preheat oven to 180°C (350°F).
Grease a baking dish or line with parchment paper.
Transfer mixture to dish and spread evenly.
Bake for 20 minutes or until top is golden and bake is set.
