Oat, Apple and Carrot Cake: Sugar and Flour Free – a Healthy Delight
Instructions:
First, grind the rolled oats and baking powder in a blender until you get a fine flour.
Then, transfer to a bowl, add the milk, and stir lightly. Let it rest for a few minutes.
Next, grate the peeled carrot and mix it with the oats and milk. Place the dried apricots and raisins in a cup of water to soak for 5 minutes.
After that, dice the apple into small cubes and add it to the mixture, stirring well until combined.
Then, chop the apricots and add them to the mixture along with the raisins and cinnamon (optional). Mix everything together.
Next, in another bowl, beat 3 eggs with a pinch of salt, stevia sweetener (or demerara sugar), and vanilla extract for about 2 minutes until smooth.
Finally, pour this mixture over the oat mixture and stir until well incorporated.
Lastly, transfer the batter to a greased baking pan and bake in a preheated oven at 350°F (180°C) for 45 to 50 minutes.
Check if the cake is done by inserting a toothpick in the center; it should come out clean.
Let cool before unmolding and serving.
