- Prepare the Potatoes:
- Boil the diced potatoes in a large pot of salted water until tender (about 10-15 minutes). Drain and let cool slightly.
- Make the Casserole Mixture:
- In a large bowl, combine the sour cream, cream of chicken soup, 1 1/2 cups of the cheddar cheese, green onions (if using), bacon (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Combine:
- Fold the cooked potatoes into the creamy mixture until they are well coated.
- Transfer to Baking Dish:
- Pour the potato mixture into the greased baking dish, spreading it evenly.
- Top with Cheese and Chips:
- Sprinkle the remaining 1/2 cup of cheddar cheese on top, followed by the crushed potato chips or cornflakes.
- Bake:
- Bake in the preheated oven for about 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
