Mix in confectioners sugar, mint extract, and a few drops of green food coloring. Scrape down the sides and bottom of the bowl with a rubber spatula and mix until smooth and combined. *TIP: Make the color slightly darker than you want because it will lighten when the Cool Whip is added.

Fold in the whipped topping and mini chocolate chips.

Transfer to a serving bowl, sprinkle a few extra chocolate chips on top, and serve with cookies or fruit for dipping.
- Store in an airtight container in the refrigerator for up to 3 days.
- You can make this dessert dip up to 2 days in advance and refrigerate until serving. Just give a nice stir and sprinkle some extra chocolate chips on top before serving.
- Don’t overmix the dip once the whipped topping is added. Fold it in gently to keep the dip fluffy.
