Preparation
Activate the yeast
Dissolve the fresh brewer’s yeast and sugar in a portion of lukewarm water. Let stand for 5 to 10 minutes until a light foam forms on the surface.
Prepare the dough
In a large bowl, sift the flour and add the salt.
Pour the activated yeast and the remaining water into the flour, mixing gradually.
Add the extra virgin olive oil and knead until the mixture is smooth and soft.
Let the dough rise
Cover the dough with a clean cloth and let it rise in a warm place for about 2 hours, or until doubled in size.
Shape the mini pizzas
Divide the dough into 12 equal balls and roll them out slightly to create round bases.
Place the bases on a baking sheet lined with parchment paper.
Add the seasonings
Personalise your mini pizzas with tomato sauce, mozzarella and your favourite toppings, such as olives, mushrooms, ham or grilled vegetables.
Cooking the mini pizzas
Preheat the oven to 220°C and bake the mini pizzas for about 10 to 12 minutes, until golden and crispy.

Wholemeal version: Swap half of the 00 flour for wholemeal flour for a more rustic version.
Sweet mini pizzas: Try filling the bases with chocolate spread or jam for a sweet alternative.
Freezing: Mini pizzas can be frozen after baking; simply reheat in the oven for 5 minutes before serving.
