Mediterranean Whole Roasted Fish
Ingredients:
For the Fish:
1 whole fish (such as sea bass, snapper, or trout), cleaned and scaled
2 tablespoons olive oil
1 lemon, sliced
2 garlic cloves, minced
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon chili flakes (optional)
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
For the Vegetables:
1 cup cherry tomatoes
1 small red onion, sliced
Lemon slices for roasting
Optional Sauce:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon honey or maple syrup
Salt and pepper to taste
