Instructions:

Mediterranean Spinach and Feta Crisps
1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine the spinach, feta cheese, flour, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper. Stir until well combined.
3. Drop spoonfuls of the mixture onto the prepared baking sheet, leaving about 2 inches between each crisp.
4. Lightly spray the tops of the crisps with olive oil spray.
5. Bake in the preheated oven for 10-12 minutes, or until golden brown and crispy.
6. Let cool slightly before serving.
