Directions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the taco seasoning and salsa to the beef, stirring to combine. Let it simmer for a few minutes until the mixture thickens slightly.
In a large mixing bowl, combine the beef mixture with the black beans and corn.
Spread half of the crushed tortilla chips evenly in the bottom of a 9×13-inch baking dish.
Layer the beef mixture over the chips, then sprinkle with half of the shredded cheese.
Add the remaining tortilla chips on top, followed by the rest of the cheese.
Sprinkle the sliced black olives and green onions over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before garnishing with chopped cilantro, if desired.
Variations & Tips
For a spicier version, add a chopped jalapeño or a dash of hot sauce to the beef mixture. You can also substitute ground turkey or chicken for the beef for a lighter option. If you prefer a vegetarian version, omit the meat and add more beans or some sautéed vegetables like bell peppers and zucchini. For a creamier texture, mix in a cup of sour cream or cream cheese into the beef mixture before baking.
