Lemon Blueberry Cake
This Lemon Blueberry Cake is what happens when a muffin runs smack into the side of a cake! Featuring muffin-like layers of cake topped with lemon cream cheese frosting, this dessert is mighty tasty!
Ingredients
For the Cake
3 cups all-purpose flour
1 Tbsp baking powder
¼ tsp salt
1 cup milk
¾ cup sour cream
1 Tbsp vanilla extract
¼ cup lemon juice
1 Tbsp lemon zest
1 cup unsalted butter room temperature
2 cups sugar
2½ cups fresh blueberries
6 large egg whites
For the Cream Cheese Frosting
12 oz. cream cheese room temperature
1 cup unsalted butter room temperature
2 tsp vanilla extract
2 tsp lemon juice
1 Tbsp lemon zest
4 cups powdered sugar
{optional} additional blueberries for decorating
