Layered Mashed Potato and Meat Casserole
Instructions
- Prepare the Mashed Potatoes:
- In a large pot, boil the cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
- In a large mixing bowl, combine the drained potatoes, milk, butter, salt, and pepper. Mash until smooth and creamy. Stir in the shredded cheese if using. Set aside.
- Cook the Meat Layer:
- In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant (about 3-4 minutes).
- Add the ground beef (or chosen meat) to the skillet. Cook until browned and cooked through, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.
- Stir in the frozen mixed vegetables, cream of mushroom soup, Worcestershire sauce, salt, and pepper. Cook for an additional 3-4 minutes until heated through.
- Assemble the Casserole:
- Preheat your oven to 350°F (175°C).
- In a greased 9×13-inch baking dish, spread the meat mixture evenly across the bottom.
- Layer the creamy mashed potatoes over the meat, smoothing it out with a spatula to cover completely.
- Sprinkle the shredded cheese over the mashed potatoes. If using, add breadcrumbs on top for added crunch.
- Bake:
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
- Serve:
- Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
