I tried this for dinner last night, and WOW
Instructions:
Get the oven ready: Get your oven hot enough to bake at 350 degrees Fahrenheit (175 degrees Celsius). Press some cooking spray onto a baking dish that measures 9 by 13 inches.
The breadcrumbs need to be soaked by mixing them with milk in a small dish. Give it five minutes to soak.
In a big basin, mix together the ground beef, soaked breadcrumbs, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme to make the meatloaf mixture. Combine thoroughly.
Form meatloaf: When the baking dish is ready, transfer the meat mixture and form it into a loaf.
To prepare the topping, combine the ketchup, brown sugar, and Dijon mustard in a small bowl. Serve on top of the meatloaf.
Cook: Preheat oven to 71 degrees Celsius (160 degrees Fahrenheit) and bake for 50 to 60 minutes, or until done.
While the meatloaf is in the oven, boil some chopped potatoes in a big saucepan with some cold water to make mashed potatoes. Raise the heat to high and season with a pinch of salt. Continue cooking for another ten to fifteen minutes, or until the vegetables are soft. Rinse and put back into the pot. Melt the butter and milk. Blend or mash until creamy and smooth. Finish with a pinch of pepper and salt.
After the meatloaf has finished baking, cover it with mashed potatoes and bake. On top, crumble some cheddar cheese. Melt and bubble the cheese by broiling for three to five minutes.
The meatloaf is best served after it has rested for at least 10 minutes. Add some chopped parsley as a garnish.
Pile on the mashed potatoes and cheese for a satisfying meatloaf meal.
