Instructions:
1. Marinate: In a bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Add chicken and marinate for at least 30 minutes, or preferably longer for deeper flavor.
2. Cook: Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until browned and cooked through (about 8-10 minutes). If using cornstarch slurry, whisk 1 tbsp cornstarch with 2 tbsp of water until smooth. Stir the slurry into the chicken during the last minute of cooking to thicken the sauce.
3. Serve: Garnish with sesame seeds (if using) and serve hot over rice or noodles.

– For extra flavor, marinate the chicken overnight in the refrigerator.
