Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup cooked shredded chicken (rotisserie chicken works great)
- 1/2 cup uncooked rice (or orzo pasta)
- 2 large eggs
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- Salt and black pepper, to taste
- Fresh parsley or dill, chopped, for garnish
