Greek Lemon Chicken Soup (Avgolemono)

Ingredients

  • 1 medium onion, diced
  • 2 carrots, diced

  • 6 cups chicken broth
  • 1 cup cooked shredded chicken (rotisserie chicken works great)
  • 1/2 cup uncooked rice (or orzo pasta)
  • 2 large eggs
  • 1/4 cup fresh lemon juice (about 1–2 lemons)
  • Salt and black pepper, to taste
  • Fresh parsley or dill, chopped, for garnish
