Egg Roll Stir Fry
“A deconstructed version of the classic egg roll with all the flavors you love, but without the wrapper! Quick, healthy, and packed with veggies and protein.”
Ingredients
- 1 pound ground pork (or ground turkey, chicken, or beef)
- 2 tablespoons sesame oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated (or 1/4 teaspoon ground ginger)
- 1 small head of green cabbage, thinly sliced (about 4 cups)
- 1 large carrot, shredded
- 1/2 cup bean sprouts (optional)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1/4 teaspoon crushed red pepper flakes (optional, for heat)
- 2 green onions, sliced, for garnish
- 1 tablespoon sesame seeds, for garnish
