- In a deep bowl, mix the water and egg. Gradually add the salt and flour, mixing until a soft, non-sticky dough forms.
- Divide the dough into 4 equal portions, cover, and let them rest for 10 minutes.
- Roll each portion of dough into a 40 cm sheet. Spread softened butter over the surface of each sheet. Stack the sheets, one on top of the other, applying butter between each layer. Butter the top layer as well.
- Stretch the stacked dough sheets gently from the edges to form a square. Fold the two opposite edges towards the center and apply butter. Repeat with the remaining two edges and butter again. Fold the dough in half, butter it, and fold again into a square form.
- Cover the dough and let it rest in the refrigerator for 1 hour.
- After resting, roll the dough out into a square on a lightly floured surface. Cut the dough in half, then slice each half into 7 strips, making a total of 14 strips. Make small cuts at the ends of each strip.
- Place a portion of feta cheese at the end of each strip that has not been cut. Fold the strips into shapes.
- Arrange the prepared pastries on a baking tray lined with parchment paper. Brush the tops with egg yolk.
- Bake in a preheated oven at 180°C (350°F) until golden brown.
