creamy broccoli and chicken
Instructions:
- Cook the chicken:
- Season both sides of the chicken breasts with salt, pepper, and paprika (if using).
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Add the chicken and cook for about 5-6 minutes on each side, or until golden brown and fully cooked through (internal temperature should be 165°F/75°C). Remove the chicken from the skillet and set it aside.
- Sauté the broccoli:
- In the same skillet, add the remaining tablespoon of oil or butter.
- Add the minced garlic and sauté for 1 minute, until fragrant.
- Add the broccoli florets and cook for 3-4 minutes, stirring occasionally, until they are bright green and slightly tender.
- Make the creamy sauce:
- Pour in the chicken broth and bring it to a simmer. Let it cook for about 2 minutes, allowing the broth to reduce slightly.
- Stir in the heavy cream and Parmesan cheese. Cook for another 2-3 minutes, stirring occasionally, until the sauce is thickened and creamy.
- Taste and adjust seasoning with salt, pepper, and thyme, if desired.
- Combine the chicken:
- Slice the cooked chicken into strips or bite-sized pieces.
- Return the chicken to the skillet and stir to coat with the creamy sauce. Let everything cook together for 2-3 minutes to meld the flavors.
- Serve:
- Garnish with chopped fresh parsley for a burst of color and freshness.
- Serve the creamy broccoli and chicken over rice, pasta, or even mashed potatoes.
Enjoy your delicious, creamy chicken and broccoli dish!
