Classic Pasta e Fagioli
Ingredients
- 1 pound ground Italian sausage
- 1 large yellow onion diced
- 1 cup minced carrots
- 1/2 cup minced celery
- 5 cloves minced garlic
- 4 cups beef broth
- 1 can (30 ounces) fire roasted diced tomatoes
- 1 (15 ounce can) red kidney beans drained and rinsed
- 1 (15 ounce can) cannellini beans ,
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper or to taste
- 1/2 teaspoon dried thyme
- 1 1/2 cups ditalini pasta
Garnish
- 1/4 cup chopped fresh basil
- 1/2 cup freshly grated parmesan cheese
