Ingredients

Sufganiyot

  • 1/2 cup warm water (105° to 110°F)
  • 2 (1/4-ounce) envelopes active dry yeast
  • 1 1/2 cups warm whole milk (105° to 110°F)
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 teaspoons kosher salt
  • 2 large eggs
  • 6 1/2 cups (27 5/8 ouncesall-purpose flour, divided, plus 1 to 2 tablespoons more as needed, plus more for work surface and baking sheets

Cardamom Pastry Cream

  • 2/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 2 1/2 teaspoons ground cardamom
  • 1/8 teaspoon kosher salt
  • 2 large eggs
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, softened

Additional Ingredients

  • Vegetable oil
  • 2 teaspoons ground cinnamon
  • 1/2 cup granulated sugar
