Instructions:
Prepare the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese until smooth.
Add the sugar and vanilla extract, mixing until well combined.
Beat in the egg until the mixture is smooth. Set aside.
Make the Churro Dough:
In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
Once boiling, remove from heat and stir in the flour until combined and the dough forms a ball.
Allow the dough to cool slightly, then beat in the eggs one at a time until fully incorporated and smooth.
Assemble the Cheesecake Bites:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Using a piping bag or a spoon, fill each churro dough ball (about 1-2 tablespoons) with the cheesecake filling. Seal the dough around the filling, ensuring it’s completely enclosed.
Place the stuffed dough balls on the prepared baking sheet.
Bake:
Bake for 20-25 minutes, or until golden brown. The dough should be cooked through.
Coat the Bites:
While the churro bites are baking, mix the sugar and cinnamon in a bowl.
Once baked, immediately brush the churro bites with melted butter and roll them in the cinnamon sugar mixture.
Serve:
Allow the bites to cool slightly before serving. Enjoy warm for the best flavor!
Tips:
These can be served with a side of chocolate sauce or caramel for dipping!
For added flavor, you can mix some chocolate chips into the cheesecake filling.
