Instructions
- Sauté the onion: Heat olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent, about 3–4 minutes.
- Combine ingredients: Add the chicken, black beans, corn, diced tomatoes, taco seasoning, ranch dressing mix, and chicken broth to the pot. Stir to combine.
- Simmer: Bring the soup to a boil, then reduce heat and let it simmer for 20–30 minutes to let the flavors meld together.
- Adjust seasoning: Taste the soup and add salt, pepper, or additional spices as needed.
