Chicken Feta Spinach Pasta
Ingredients:
- 8 ounces uncooked pasta
- 2 chicken breasts, cut into bite-size pieces
- 1 tablespoon olive oil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/3 cup chicken broth
- 1/2 teaspoon Dijon mustard
1 teaspoon lemon juice - 1 (10.5 ounce) container of little tomatoes (grape, cherry, etc.), cut into halves
1.5 cups (packed) fresh baby spinach
3.5 ounces feta (cubed and packed in oil and herbs) - Red pepper flakes to taste (optional)
- Freshly grated Parmesan cheese to taste (optional)
