Chicken Dumpling Soup

Ingredients

For the Soup

1 ½ pounds boneless skinless chicken thighs cut into bite sized pieces
▢1 tablespoon olive oil
▢3 tablespoons butter
▢1 small onion finely diced
▢3 tablespoons all-purpose flour
▢¾ teaspoon poultry seasoning or ¼ teaspoon ground sage
▢¼ teaspoon dried thyme leaves
▢¼ teaspoon salt
▢¼ teaspoon black pepper
▢4 cups chicken broth or chicken stock, plus additional if needed
▢2 carrots sliced or diced
▢2 stalks celery diced
▢1 cup green peas optional

For the Dumplings

⅔ cup all-purpose flour
▢1 ½ teaspoons baking powder
▢½ teaspoon salt
▢2 tablespoons butter
▢⅓ cup cold milk
