- Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add them to the skillet and cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.
- Sauté the Mushrooms: In the same skillet, add the sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until they are browned and tender. Add the minced garlic and thyme, cooking for an additional minute until fragrant.
- Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for a few minutes to reduce slightly. If you want a creamy sauce, stir in the heavy cream and cook for another 2-3 minutes until heated through.
- Combine: Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce and heat everything through (about 2-3 minutes).
- Serve: Garnish with fresh parsley and serve over rice, pasta, or with crusty bread.
