Cheesy Taco Pinwheels

An air fryer basket full of taco pinwheels.

Ingredients

½ pound ground beef see notes
2 tablespoons taco seasoning
3 ounces cream cheese room temperature
1 tablespoon sour cream
Salt to taste
2 large flour tortillas
¼ cup shredded cheddar.

Instructions

Brown the beef in a small skillet over medium heat, crumbling the meat as it cooks.
Once the beef is cooked through, drain the grease and add ¼ cup of water and the taco seasoning. Stir to combine and cook for 5-10 minutes, until the liquid has evaporated.
Add the seasoned beef, cream cheese, and sour cream to a bowl and mash the mixture together with a fork until well combined. Taste and season with salt, if needed.

Divide the mixture evenly between 2 tortillas and spread to the edges.
Sprinkle the cheese evenly over each tortilla and roll up tightly.
Use a sharp knife to trim the edges of the tortilla off and then slice each tortilla into 5 pieces.
Arrange the pinwheels in an air fryer basket in an even layer. Cook at 370 degrees for 5 minutes.
Serve immediately.
Notes
This recipe is a great way to use up leftover taco meat. You’ll need about 1 cup of cooked beef.
Serve these with salsa or guacamole for dipping.
To make this recipe low carb, use low carb tortillas.
