Instructions

  1. Cook the Beef:
    • In a large skillet, heat a little oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
    • Add the garlic and ground beef, cooking until the beef is browned. Drain any excess fat.
  2. Season the Mixture:
    • Stir in the chili powder, cumin, paprika, salt, and pepper. If using, mix in the cooked rice and black beans. Remove from heat and let cool slightly.
    • Stir in 1 cup of shredded cheese until well combined.
  3. Assemble the Burritos:
    • Place a generous amount of the beef mixture in the center of each tortilla. Fold in the sides, then roll it up tightly from the bottom.
    • Place the burritos seam-side down in a greased baking dish.
  4. Top with Cheese:
    • Sprinkle the remaining shredded cheese over the top of the burritos.
  5. Bake:
    • Preheat your oven to 375°F (190°C). Bake the burritos for about 15-20 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove from the oven and let cool slightly. Serve with salsa or sour cream if desired.
