Preparation:
1. Make the dough
Mix dry ingredients: In a large bowl, sift together the flour, salt and baking powder, then mix well.
Incorporate wet ingredients: Add the plain yogurt and olive oil. Mix with a wooden spoon or by hand until the ingredients start to come together.
Shape the dough: Gradually add warm water, spoonful by spoonful, until the dough is soft and slightly sticky. Do not overknead it to avoid it becoming tough.
2. Resting time
Let the dough rest: Cover the bowl with a clean tea towel or plastic wrap and let it rest at room temperature for about 20 minutes. This helps to relax the gluten and make the naans softer.
3. Shape the naans
Divide the dough: After the resting time, sprinkle a little flour on the work surface and place the dough on it. Divide into 8 equal portions (or 4 if you prefer larger naans).
Flatten the portions: Take one piece of dough and gently flatten it into a flattened shape about 1cm thick. Repeat with the other pieces.
Garnish: Sprinkle grated cheese generously on top of each flattened shape. If using garlic or herbs, add them at this stage.
4. Shape the naans
Close the naans: Fold the flattened shape in half to enclose the cheese inside and seal the edges by pressing gently. You can also form a ball and gently flatten if you prefer. If there is some cheese left on the outside, that’s okay, it gives a crispy appearance.
Repeat: Repeat this step for all the pieces of dough.
5. Bake
Heating the pan: In a non-stick pan, heat a little olive oil over medium heat. You can also use a cast iron pan for better results.
Cooking the naans: Place one naan in the hot pan and cook for 3 minutes on one side. Watch carefully to prevent it from burning, and wait until it is well puffed.
Flip and cook the other side: Flip the naan and cook for another 3 minutes or until golden and cooked. Repeat with the other naans.
6. Finishing and serving
Serve hot: Serve the cheese naans immediately, preferably with dips such as plain yogurt, garlic sauce or a chutney of your choice. You can also garnish them with a little melted butter and fresh coriander for an exceptional taste.
