Ingredients
For the Soup Base:
- 2 tablespoons olive oil
- 1 lb ground beef or ground turkey (or a mix of both)
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 small head of cabbage, chopped (about 6–8 cups)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 can (8 oz) tomato sauce
- 4 cups beef or chicken broth (or vegetable broth for a vegetarian option)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper, to taste
For the Rice:
- 1/2 cup uncooked white or brown rice (or 1 cup cooked rice)
