Instructions
1. Preheat and Prep
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream Butter and Sugar
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
3. Add Dry Ingredients
- Gradually add the flour and salt to the butter mixture, mixing until combined. Stir in the chopped pecans.
4. Shape the Cookies
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 2 inches apart.
5. Bake
- Bake in the preheated oven for 12–15 minutes, or until the bottoms are lightly golden.
6. Coat in Sugar
- Let the cookies cool slightly, then roll them in powdered sugar while still warm.
- Once fully cooled, roll them in powdered sugar again for a thicker coating.
