Step-by-Step Guide
Step 1: Prepare the Dough
Activate Yeast: In a small bowl, warm the milk until it’s slightly warm to the touch (110°F or 45°C). Sprinkle the yeast over the milk and let it sit for 5 minutes until it becomes frothy.
Mix Dough Ingredients: In a large mixing bowl, combine the sugar, butter, and eggs. Add the yeast mixture and mix well. Gradually add the flour and salt, mixing until a dough forms.
Knead and Rise: Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 2: Prepare the Blueberry Swirl
Cook Blueberries: In a small saucepan, combine the blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens and the blueberries burst, about 5 minutes. Remove from heat and let it cool.
Step 3: Prepare the Cheesecake Filling
Mix Filling Ingredients: In a medium bowl, beat together the cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy. Set aside.
Step 4: Assemble the Rolls
Roll Out Dough: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll the dough into a rectangle approximately 16×12 inches.
Spread Filling: Evenly spread the cheesecake filling over the rolled-out dough, leaving a small border around the edges.
Add Blueberry Swirl: Spoon the cooled blueberry mixture over the cheesecake filling and gently spread it out.
Roll Up: Carefully roll the dough up from one long side into a tight log. Pinch the edges to seal.
Cut Rolls: Slice the rolled dough into 12 even pieces and place them in a greased 9×13-inch baking dish.
