Black Pepper Chicken with Mushrooms

Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil (optional)

For the Sauce:

  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce (for richer color, optional)
  • 1 teaspoon sugar
  • 1 teaspoon freshly cracked black pepper (adjust for spice level)
  • 1/4 cup chicken broth

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 medium onion, sliced
  • 8 oz mushrooms, sliced (shiitake, button, or cremini work well)
  • 1/2 green bell pepper, sliced (optional)
  • 1/2 red bell pepper, sliced (optional)
